This miso is made by blending a selection of premium organic misos, carefully chosen to reduce the salt content naturally—without the need for added alcohol or preservatives. The result is a well-balanced, full-bodied miso that’s high in protein and low in saturated fat. How it’s made Clearspring Organic Reduced Salt Miso is prepared using traditional fermentation methods by a long-standing family producer in Japan’s Nagano prefecture. Whole soya beans are slowly fermented and never pasteurised, preserving their natural living cultures. To achieve a rich, rounded flavour with less salt, a variety of expertly aged misos are combined together.
